scratch of how it could look like

This scratch (attachment) was based on the CardBook add-on for Thunderbird.

The idea is to have a more powerful way of adding authors to documents.

Notice the "@" button where one could add an e-mail of the author and it would show the photo from Gravatar.

It is an enhancement request.

Could you please add more details to this enhancement? Under which situations the dialog would be displayed ? and for what purpose ?

Well, my PhD thesis has 3 authors:
1) supervisor
2) cosupervisor
3) me

So, I have the three in the .docx properties.

The thing with LO is that it also only accepts one author, but when I converted the .docx to .odt or something I can't remember what I did, each author was separated by a ";".

It is just an enhancement request (see the screenshot of the scratch above, and it is better explained with a Gmail account editing the mobile phone contacts, since there it works like a glove).

You have the tab 'Custom Properties' inside the Properties dialog.
is it what you are looking for ?

Here is a Word 365 screenshot, but LO can make it better based on my first scratch allowing to move up/down the authors.

Saving a Word document with multiple authors as ODF shows them in the first tab of the properties dialog with no chance to edit. All are stored in one tag:
<meta:initial-creator>Dr. Bar;Prof. Foo;Heiko Tietze</meta:initial-creator>
There is also the <dc:creator> but obviously no chance to store different people individually with roles like <meta:initial-creator><meta:role>Reviewer>Prof. Foo</meta:role>...

So it's a roundtrip issue but at the same time a missing bit in the format.

Removing needsUX, the request is reasonable. UI wise I recommend file > properties as a place to enter author and additional authors.
