Please see the release notes. https://wiki.documentfoundation.org/ReleaseNotes/25.2#User_Interface

At the 25.2 release a new Appearance Theme framework was implemented.

By default it follows the os/DE color sense (for light or dark theme) as previously, but also implements extension based color theming for the user interface.

Use the Tools -> Options -> Appearance panel and use the "Add more themes" button (the puzzle piece icon) to select a theme.

If you'd like an appearance like the previous UI, install and select the 'Light Application Color' theme. Allow the offered Restart LibreOffice.

Note: do not change the Radio buttons from System, Light or Dark with just the 'Default' os/DE provided theme is active. Corrected for the 25.8 release, but at 25.2 setting Light or Dark will corrupt ability to follow the os/DE color sense.
