The sidebar lists all predefined arrow heads split into start and end options. The request is likely inspired from the "[ ] Synchronize ends" option in the Line properties dialog. However, synchronize means also to have the same width which is not available in the sidebar (although requested in bug 164928). We cannot list all properties there and should not try to make dialogs obsolete. Such proposed "[ ] Synchronize" option would increase the dropdown size significantly for no good reason since the arrow typically (or rather more often) points towards something than it connects two objects. For a consistent look and feel it's recommended to use drawing style anyway.
