Tools -> Options -> Load/Save -> General -> Always Save As 

is only for Word/Writer Documents, should also include Calc/Impress/Draw & Base default options too.

it does it indeed.

you have 2 drop-down menus:
- document type
- always save as

if you scroll the multiple choices of the document type you'll see that you have an "always save as" option for spreadsheets, presentations, formulas etc. etc
