To create a pivot table, you grab something like 
timeatlas.com/wp-content/uploads/pivot_table_example1.xls

Then Data -> Pivot table -> Create... -> OK

Then you're supposed to drag fields across the various listview widgets, but this will not work if you have libreoffice-gtk3 installed (nothing happens then).

Apparently lots of people have noticed this in debian circles, but it seems like nobody reported this in Red Hat Bugzilla or here upstream: https://encrypted.google.com/search?q=libreoffice-gtk3 pivot table

Drag & drop isn't implemented at all in gtk3.
