When I try to install the LibreOffice_5.1.0_MacOS_x86-64.dmg, the copying 
into the Programs directory of my OS X 10.10.5 (Yosemite) Mac Book works fine.
However, as soon as I try to open the Programs's icon, the package verification
runs quite long (showing the progress bar). When the progress bar reaches its
end, the CoreServicesUIAgent process starts to use 80 - 90 % CPU and nothing
happens anymore until you stop that process. No LibreOffice window opens
(neither the splash window).

I can confirm this: I'm also on MBP on OS X 10.10.5, copying the application works fine. But when running it, it gets stuck when reaching the end of the progress bar.

I can confirm.
It also happens identically with 5.0.5.2

5.0.4002 works fine on my 
iMac with OS 10.10.5 Yosemite

I can confirm the bug, on MacBookAir7,1 running OS X 10.10.5, happening exactly as described by original poster.

changed to Version 5.0.5 at earliest affected
changed importance to critical (no Mac-User can install any newer Version)

Maybe only a problem with Mac OS 10.10 Yosemite?
But a blocker for newer versions for all this users.

Installations I could not open are 5.0.5, 5.1, 5.1.1003

Last working Version is 5.0.4.2

In bug 97530 they have found a workaround for this bug.
But I think it need to be fixed.

On MacOs 10.11.5 + LO 5.1.4, I don't reproduce this.
Could someone may give a try?

I can confirm that after update to OS X 10.11.5 (El Capitan) the problem disappears,
while it for sure was present with 10.10.5 (Yosemite).
