As per attached screenshot, when one inserts a table, then opens Table Properties, the active tab has white text with white background, preventing one from seeing what is active.

Please test with a clean profile, Menu/Help/Restart in Safe Mode

Seems you have enabled dark mode.
Verify it is selected also in LibreOffice.
Menu/Tools/Options/LibreOffice/Application Colors - Color Scheme.
or maybe accessibility options

I don't recall ever actively adjusting anything in either area (see attached for current configurations).

Here is what I just tried changing from the defaults and what happened:

1) LibreOffice > Preferences > LibreOffice > Accessibility > High Contrast: > from:
Automatic

to either:
Disable
Enable

Still white text on white background. For Enable, it did change other colors within the GUI.

2) LibreOffice > Preferences > LibreOffice > Application Colors > Scheme: > from:
LibreOffice

to:
LibreOffice Dark

Still white text on white background. Other colors changed within the GUI.

3) System Settings > Appearance > under Appearance change from:
Dark

to:
Light

This changed it to black text with white background with the default (i.e. as it came installed) LO settings.

Hence, I think it's reasonable to adjust how LO defaults colors to control for if the user changes the appearance to either Light or Dark in System Settings.

Using the same OS Appearance settings, and same LO view settings, I found that the defining factor is the use of the OS setting Accessibility > Display > Increase contrast (the white outline of the fields in the LO dialog gave it away).
