I guess OpenPGP is https://help.libreoffice.org/7.0/en-US/text/shared/guide/openpgp.html. X.509 I see only at https://help.libreoffice.org/7.0/en-US/text/shared/01/ref_pdf_export_digital_signature.html and not for PDF signing.
